Easy Turkey Meatloaf Recipe + Sides

  • 3lbs ground turkey 
  • 1 bag frozen broccoli
  • 7 red potatoes
  • 1/4 chopped onion
  • 1/4 chopped green bell pepper
  • 1/4 chopped jalapeño (optional)
  • 1/2 tsp of chicken bullion
  • 1/2 tsp cajun seasoning
  • 4 tsp garlic powder
  • 2 tsp of worcheshire
  • 1/2 cup heavy whipping cream
  • 1 egg
  • 1 stick of butter
  • Salt/Pepper

STEP 1

Bring large pot of salted water to a boil. Quarter your red potatoes and place in boiling water. Potatoes are done when you can stick a fork into them and it slides out easily. 

Next mix turkey and all seasonings (but ONLY 2 tsp of garlic powder) and egg in a large ball. (Jalapeño can be added at this time.)

Once mixed well, transfer into a baking dish creating a loaf shape.

Bake on 350 for 45 minutes to 1 hour. 

STEP 2

On a medium to high heat add 2 tsp butter and 1 bag of frozen broccoli. Add 1/4 tsp of cajun seasoning, 1/4 tsp of garlic powder and cook down until broccoli is tender. 

While broccoli is cooking drain potatoes. Reserving 1/4 cup of cooking liquid, add 2 tsp of butter and 1/2 cup of cream. Add salt, pepper, garlic powder to taste and mash to your desired consistency. For a loose mash potato, slowly add in more cream until desired texture. For more of a burst of flavor add 1/4 tsp of chicken bullion.

STEP 3

Once turkey meatloaf is done take out of oven and drain fat. Allow meatloaf to set for 5-10 minutes before cutting. In the mean time you can begin plating your sides.
