Cool weather is approaching and what better way to welcome it in than with this quick and easy recipe that tastes like you have been on your feet cooking all day. This simple recipe can be made in a crockpot or on the stove, your choice. Either way it will taste amazing and you are going to come back for a second bowl. So cue up your favorite movie, start the fire and grab that blanket because this is going to be good.
INGREDIENTS
- 3 bags of frozen broccoli
- 1 pack of velveeta block cheese
- 1 can of cheese soup
- 1 cup of chopped celery
- 1 cup of chopped onion
- 1 cup of chopped carrots ( shredded if you wish)
- 6oz of pepper jack cheese
- 6oz of sharp chedda1 32oz of chicken broth
- 2 green onions (optional)
- 2tsp chicken bullion
- 1 pint of heavy whipping cream
- 1/2 tsp salt
- 1tsp pepper
- 1tsp chicken base
- 2tsp garlic powder
STEP 1
Sauté your carrots, celery, onions until soften to your liking.
Once soften pour 1 full container of chicken broth and all your seasonings (save your green onions for later)
Cut the velveeta cheese into cubes for easy melting and add to your cooking pot of choice. Let simmer for 5 mins.
STEP 2
Add in your cheese soup, along with your cheddar and pepper jack cheese and stir. Please do not skip the pepper jack. This adds an amazing boost of flavor you do not want to miss.
At this point your soup base should be coming together. This is also a good time to taste to see if more seasoning is needed. Add in a few red pepper flakes if you like your soups with a little kick.
Once soup is to your taste buds add in your frozen broccoli and bring back to a slow simmer.
Let soup simmer for at least 20 minutes (or more depending on the broccoli texture you desire)
STEP 3
Top with your favorite toppings … extra cheese, green onions.. the choice is yours.
