Chili for Chilly Nights

I get it, its cold outside, loads of laundry to be washed and folded. House to be cleaned and kids yelling in the background. 

This chili is the answer to a cold day where all you want to do is binge watch movies with a glass of wine and let the kids have the house.

Cooking with CarlinINGREDIENTS

  • 3 cans of dark kidney beans
  • 3 cans of light kidney beans 
  • 1 can of tomato paste
  • 1 box of chicken broth
  • 1-2 pounds of ground beef
  • 2 packs of chili seasoning pouches
  • 1/2 chopped onion
  • 1/2 chopping bell pepper
  • 2 tsp Garlic powder
  • 1 tbsp Chili powder
  • 1 1/2tsp Chicken bullion powder
  • 1/2 tsp Adobe seasoning
  • Red pepper flakes (optional)
  • Salt/Pepper
  • Sour cream/cheese (optional)

ChiliSTEP 1

Brown your ground beef with the onion and bell pepper, drain and put to the side. 

STEP 2

Open all 6 cans of beans and rinse. Place beans in a big pot on stove on medium high heat. Next, pour in 1 full container of chicken broth and tomato paste. Let cook for 30 minutes.

STEP 3

Add in your ground beef and seasonings (seasonings are to taste). The above seasonings are a guide and can be adjusted as you wish. Add in as much or as little as you like. If you are like my family, the hotter the better.

Let simmer for about 30 minutes, checking at the 15 minute mark for liquid. You may need to add 1/2 cup of warm water at this point depending on how thick or loose you like your chili.

 STEP 4

 Garnish and serve.

ALTERNATIVE VERSION

STEP 1

Brown ground beef and drain.  Place ground beef along with all seasonings in a crockpot and cook on low for 2 or 4hours.
