Favorite Crockpot Soup Recipes

We know how busy life as a mama can be! We also know how time consuming it can be to come home from work to start dinner OR start dinner when you are wrangling small children! ENTER…THE CROCKPOT.

Seriously. The best invention ever. And the best part about this post? We won’t write a lot because we know you barely have time to have read this far ;) So we are going to get straight to the point and share the recipes right here!


Crockpot Minestrone Soup

Here’s what you need:

  • 2 cans diced tomatoes

  • 1 tablespoonss tomato paste

  • 4 cups vegetable or beef stock

  • 2 cups water

  • 1 frozen package of peas + carrots

  • 2 celery stalks, diced

  • 1 1/2 cup white onion, diced

  • 4 - 5 cloves garlic, minced

  • 2 tsp Italian seasoning

  • 2 bay leaves

  • 1 can red kidney beans, drained and rinsed

  • 1 can great northern beans, drained and rinsed

  • 2 zucchini, diced

  • 1 1/2 cups small pasta

  • 1 cup frozen green beans

  • 2 1/2 cups baby spinach

  • Finely shredded Parmesan cheese, for serving

  • salt and pepper to taste


What to do:
1. Add everything but the pasta to the crockpot. Season it up well with salt and pepper and cook on low for 6-8 hours.

2. Add pasta in for the final 25-30 minutes and serve with bread for dipping.



SIMPLE TACO SOUP

  • 1 lb ground turkey OR ground beef, browned

  • 1 diced onion

  • 1 can rotel

  • 1 can diced tomatoes

  • 1 can black beans, drained

  • 1 can corn with juices

  • 1 packet of taco seasoning (I like SIETE brand because there is no added sugar or artificial ingredients )

  • 1 packet of ranch seasoning

  • 2 cups broth of choice

  • 1/2 block of cream cheese


What to do:

1. Brown the meat and toss all ingredients into crock pot and low for 6-8 hours OR high for 3-4 hours a day! Toss in the cream cheese to melt at the last few minutes and serve with your fave toppings!!!

If you don't like spicy, use a second can of diced tomatoes vs the rotel! If you like bell pepper, add that in, too!


Crockpot Lasagna Soup

  • 1. Lasagna soup:

  • 1 lb. ground beef + 1 package ground sausage

  • 1 onion, diced

  • 1 jar of marinara

  • 1 box of chicken broth

  • Container of spinach

  • Lasagna noodles in pieces

  • Top with ricotta, mozzarella, parm
    Season with italian seasoning


What to do:

1. Brown the meat with the diced onion and place in crockpot! Add the rest of the ingredients (except for cheese)

2. Cook on low for 6-8 hours or high for 3-4 hours.

3.Top with cheese mixture! And make sure to toast some garlic bread for dipping

*For a more firm pasta, you can add the noodles for the last hour instead of the whole time.


Crockpot Potato Soup

  • 2 tablespoons unsalted butter

  • 1 small yellow onion, diced

  • 3 large carrots, chopped

  • 2 pounds Yukon gold potatoes peeled and cut into 1/2-inch chunks

  • 1 teaspoon Italian seasoning

  • 3–4 cups reduced-sodium chicken broth (or vegetable broth)

  • 1 can 2% evaporated milk (THE SECRET)

  • 3 tablespoons of flour

  • 1 cup shredded sharp cheddar cheese plus additional for serving

  • 1 cup PLAIN Greek yogurt

  • toppings of choice (green onions, cheese, bacon, sour cream)


What to do:

  1. Put butter and onion in the crockpot on low.

  2. Add the carrots, potatoes, Italian seasoning, salt, pepper, and broth.

  3. Cook on low for 6-8 hours or until potatoes are tender.

  4. In the final 30 minutes- an hour, whisk the evaporated milk together with the flour and add to the crockpot.

  5. Stir in the cheddar cheese and yogurt until melted and mixed in.

  6. You can use an immersion blender OR a simple potato masher and extra broth until you get the texture you want!

  7. Top with your favorite toppings and enjoy!


Crockpot Chili

  • 1 lb. ground beef or turkey

  • 1 bell pepper of choice

  • 1 onion

  • 1 jar of medium salsa

  • 1 can of kidney beans

  • 1 can of mild chili beans

  • 1 packet of taco seasoning

  • 1-2 cups of broth of choice

  • cornbread mix of choice


What to do:

  1. Brown the beef the night before OR just before adding to the slow cooker.

  2. Add the rest of ingredients and cook on low for 6-8 hours.

  3. Top with your favorite toppings and serve with cornbread.
